Raaka makes bean-to-bar from raw cacao.
Raaka is a lesson in breaking a category rule. Founded in 2010 by Ryan Cheney and Nate Hodge and based in Red Hook, Brooklyn, Raaka makes bean-to-bar chocolate from unroasted, raw cacao. Where nearly all chocolate is roasted, Raaka deliberately does not — it says roasting cooks away the bright, fruity flavours it wants to keep — so its chocolate is fruit-forward and distinctive. Everything is organic and vegan, in bars like Pink Sea Salt and the award-winning Bourbon Cask Aged.
Its sourcing is radically transparent: under its Transparent Trade program, Raaka prints the price it paid for the cacao inside every wrapper, buying directly from cooperatives at prices above Fairtrade. And its design is a deliberate counterpoint to minimalist craft chocolate — bold, colourful and playful.
