What JSON structures work?

An array of objects (one row each), an array of arrays (rows and columns), or an object whose values are arrays (one sheet each). A single object becomes one row.

What happens to nested objects?

They're flattened into dotted column names like address.city. Arrays inside a row are joined with commas.

Is my data uploaded?

No. The conversion runs in your browser with the open-source SheetJS library, so spreadsheets with customer or financial data stay on your device.
