The restaurant plate

Jono Pandolfi throws stoneware for the best restaurant kitchens in America.

Jono Pandolfi is a lesson in restaurant stoneware as the identity. An American studio in New Jersey, it makes handmade stoneware tough and beautiful enough for the country’s best kitchens.

Its identity is the restaurant plate. Jono Pandolfi’s handmade stoneware — earthy, speckled, restaurant-grade — is the work it is known for. Clay built for service. Craft you can put through a dinner rush.

(Honest notes: Jono Pandolfi Designs is an American ceramics studio based in Union City, New Jersey — in the historic Yardley Building, after an earlier studio in Long Island City — founded around 2004 by the ceramicist Jono Pandolfi, born 1976; its own timeline says 2004, with some press citing about 2005, so we hedge, and it moved to Union City in 2008. Its signature is restaurant stoneware — handmade pieces built for elite restaurant kitchens, with a breakout collaboration for Eleven Madison Park and work for restaurants like NoMad and Lilia and for MoMA’s café, in a rustic-refined style with earthy, speckled, reactive glazes, now sold direct to consumers too. On production, it is genuinely handmade in the studio’s own roughly twenty-two-thousand-square-foot Union City workshop, with many wheels and kilns and a team of artisans — made in the USA. It is independent and founder-led. One honest note: the restaurants it works with, and the shows its work has appeared on, are third-party marks we describe but don’t reproduce, and this is a real production workshop, not a one-person studio. There’s no official brand hex — these tones are an unofficial interpretation. This is design commentary and does not promote any product.)

Colour

Jono Pandolfi lives in an umber-and-oat palette. Click a swatch to copy the hex.

Jono Pandolfi’s identity is earthy, refined and durable — an umber, an ink, a speckle, a graphite, and an oat. The palette leans umber and oat — the register of earthy, speckled reactive glazes on restaurant-grade stoneware. It signals craft and use rather than novelty. The honest caveat: with no published brand hex, these tones are an original, unofficial interpretation, not first-party values.

The lesson is an umber-and-oat palette signals restaurant stoneware. Jono Pandolfi’s world is an earthy, refined, durable object. For designers, it is a reminder that a use — making handmade ware tough enough for a professional kitchen — can be the whole identity, and that an earthy, speckled palette signals that craft. Because a mid umber can fail as small text, keep type dark and let the colour live in the accents, palette and band. The takeaways: design for real use; keep it handmade; earn the professionals; and treat any single hex as unofficial.

Typography

The register is a sturdy sans — grounded, honest, confident.

Jono Pandolfi’s identity carries a grounded, honest, confident spirit — an earthy, durable object. A sturdy grotesque sans captures the mood: it is solid and plain-spoken, the register of handmade, hard-working craft. Set in an umber-and-oat palette, the sturdy sans feels grounded and honest — exactly the personality Jono Pandolfi carries. It is workmanlike rather than decorative, mirroring a restaurant-grade plate. (Jono Pandolfi’s real pieces and wordmark are works we describe but do not reproduce, and the exact typeface is not ours to use.) Because it is not ours to use, the honest description is “a sturdy sans spirit,” shown here in a stand-in. The type behaves like the brand: grounded, honest and confident.

Restaurant stoneware as identity

Jono Pandolfi stands for the restaurant plate.

Jono Pandolfi is a lesson in making a use the identity. An umber-and-oat palette, a sturdy sans and a handmade plate make restaurant stoneware the whole brand — earthy, refined, durable. The use is the differentiator. The differentiator is a demanding proving ground: handmade stoneware good enough, and tough enough, for the country’s best kitchens, made in the studio’s own American workshop.

Put to work, the identity is a use as design. A maker building in this spirit would design for the hardest customer — a professional kitchen that needs beauty and durability at once — and let that standard shape everything, then bring the same ware to everyone else. The lesson Jono Pandolfi teaches is that solving a real, demanding problem can build a brand: elite-restaurant credibility, genuine American handcraft, and a grounded, honest design language give it an authority that marketing can’t buy. Earning the professionals is the proof, and the handmade workshop is the substance.

For designers and brand-builders, Jono Pandolfi offers a clear takeaway: design for the hardest customer. The lessons: solve a real use; keep it handmade; earn the experts; and be honest about the story. It is also a reminder to stay accurate: it dates to around 2004 (some press says 2005), and it is a roughly thirty-person production workshop, not a one-person studio — the palette here is an unofficial interpretation. And it is a reminder that made-where honesty can be a genuine boast: Jono Pandolfi is handmade in its own New Jersey studio, and that is worth stating plainly. Jono Pandolfi made the restaurant plate the brand — proof that a use can be the difference.
