The sustainable salad chain

Just Salad leads fast-casual on climate.

Just Salad is a lesson in making sustainability the brand. Founded in 2006 in New York by Nick Kenner (with co-founder Rob Crespi), it is a fast-casual chain of custom salads, wraps and bowls — but its real reputation rests on environmental leadership. Its reusable-bowl program, one of the longest-running in US restaurants, has diverted enormous amounts of single-use packaging: customers buy a reusable bowl and earn a free topping each time they bring it back.

It went further: in 2020 it became the first US restaurant to put a carbon footprint label on its menu, and it is a Certified B Corporation (certified 2023). Around 120 locations, concentrated in New York and the Northeast, it pairs affordable, healthy salads with a genuinely mission-driven, climate-focused position — “Triple Washed, Never Green Washed.”

(Honest notes: Just Salad was founded in 2006 by Nick Kenner; its fame rests on sustainability leadership — the reusable-bowl program (since 2006) and being the first US restaurant to carbon-label its menu (2020); it is a Certified B Corp and climate-focused (though not asserted here as “Climate Neutral Certified”); and it is a private company of around 120+ locations. No official brand hex is published.)

Colour

Just Salad lives in a fresh-green palette. Click a swatch to copy the hex.

Just Salad’s identity is fresh, clean and green — a fresh leaf green, a crisp lime, a deep kale, a sprout wash, and a fresh cream. The palette reads like a bowl of greens: crisp, leafy, vibrant colour on a clean base. It signals fresh, healthy, eco-forward food rather than processed fast fare. The honest caveat: with no published brand hex, these tones are an original, unofficial interpretation, not first-party values.

The lesson is a fresh-green palette signals a sustainable salad brand. Just Salad’s world reads as fresh and eco. For designers, it is a reminder that crisp leaf greens on a clean base convey freshness and an environmental ethos, matching a brand built on healthy food and sustainability. The takeaways: build from crisp, leafy greens on a clean ground; keep it fresh and vibrant; and treat any single hex as unofficial — using a deep kale for small text so the bright greens stay in the palette.

Typography

The wordmark spirit is a clean sans — fresh and friendly.

Just Salad’s identity carries a fresh, friendly, approachable spirit — a “JUST SALAD” wordmark whose clean forms match a healthy, eco-forward brand. A clean sans captures the mood: it is friendly and legible, the register of an accessible, mission-driven salad chain rather than a luxury brand. Set against a fresh-green palette, the clean sans feels fresh and friendly — exactly the healthy, sustainable personality Just Salad carries. It is approachable rather than austere, mirroring affordable, healthy food. (Just Salad’s real wordmark is a trademark we describe but do not reproduce, and the exact typeface is not something we assert.) Because the specific mark is not ours to use, the honest description is “a clean sans spirit,” not the Just Salad logo. The type behaves like the brand: fresh, friendly and approachable.

Sustainability leadership as the difference

Just Salad stands for climate-forward salads.

Just Salad is a lesson in making a mission a genuine differentiator. In a crowded salad market, it stood out not on ingredients but on sustainability — a long-running reusable-bowl program, being the first US restaurant to carbon-label its menu, and B Corp certification. That climate leadership, backed by real programs rather than slogans, gives an affordable salad chain a credible, ownable identity. The differentiator is verifiable environmental action, built into the brand.

For designers and brand-builders, Just Salad offers a clear takeaway: a real, verifiable mission can be a brand’s edge. The lessons: pick a genuine commitment and prove it (reusable bowls, carbon labels, B Corp); make the mission visible to customers at the point of choice; and let a fresh, clean identity carry it. It is also a reminder to stay accurate: Just Salad’s reusable-bowl program dates to 2006, it was the first US restaurant to carbon-label its menu in 2020, and it is a Certified B Corp — with the palette here an unofficial interpretation. Just Salad led on climate — proof that a real mission can be the difference.
