An idea in Hirwaun

A company formed in 1998 and a first spirit in September 2000.

Penderyn began, the company says, as an idea shared by a small group of friends over a drink in a pub in Hirwaun, in the Cynon Valley. Wales had not produced whisky commercially for about a century; the BBC reported in 2008 that Penderyn was the first whisky commercially produced in Wales in that time. The friends chose the nearby village of Penderyn, on the southern edge of the Brecon Beacons, now Bannau Brycheiniog, for its spring water, and the whisky took the village’s name.

The company behind it, The Welsh Whisky Company Limited, was incorporated on 24 August 1998, according to Companies House, where it is still registered at the distillery. The company says the first spirit ran from its still on 14 September 2000, and the brand dates itself “since 2000.” The young business was short of money, and City AM reported in November 2025 that it was rescued by Nigel Short, a local businessman who had recently sold his family’s steel business in the Port Talbot area. Short then brought in Stephen Davies as chief executive shortly after the launch, the same report says; Davies was still chief executive in August 2024, when Just Drinks quoted him.

The whisky went on sale on St David’s Day, 1 March 2004, launched in the presence of the then Prince of Wales, the company and City AM say. English Wikipedia records that the same royal visitor opened the distillery’s visitor centre in June 2008.

Ownership has stayed local and private. The company says Penderyn “remains privately owned today, with over 60 shareholders,” and City AM gave the same figure, of more than sixty individual shareholders, in 2025. The operating company still trades as The Welsh Whisky Co., Just Drinks noted in 2024, while the brand, the distillery and the website all use the Penderyn name.

A single still, a Madeira finish and a dragon.

The heart of the brand is a piece of equipment. Penderyn distils on a still designed by Dr David Faraday, whom the company and City AM describe as a relative of the 19th-century scientist Michael Faraday. The company contrasts it with traditional Scottish pot stills: it produces spirit in a single distillation. City AM describes two copper columns fitted with perforated plates, and both it and the company say the spirit comes off at 92% ABV, against roughly 70% in conventional methods. The company’s guided tours are sold on the chance to see it.

The flavour signature came from a consultant. The company says the Scottish whisky scientist Dr Jim Swan became its first master distiller and suggested finishing the spirit in Madeira casks, which it calls its house style ever since. Its whiskies begin in American bourbon barrels, many of them, the company says, from Buffalo Trace, before finishing in Portuguese barriques that held Madeira; port, oloroso sherry and peated casks are used for other expressions. Today, the company says, distilling and blending are led by an all-women team under Aista Phillips and Bethan Morgan.

The range is organised in families. The company’s site groups its whiskies into a Gold range, a Dragon range, an Icons of Wales series and age-statement bottlings. The Icons series ties each release to a Welsh story: City AM reported that its Red Flag edition of 2012 commemorates the Merthyr Rising of 1831. Alongside whisky, English Wikipedia lists Brecon Gin, Five Vodka and the Merlyn cream liqueur, and Whisky Advocate noted a rum as well in 2023.

Welsh origin is now also a legal category. English Wikipedia, citing Decanter, records that the UK’s Department for Environment, Food and Rural Affairs granted Welsh whisky a geographical indication on 24 July 2023, requiring Welsh malted barley and Welsh water and production entirely in Wales.

The seven brands in this group are all new-wave whisky distilleries: Sullivans Cove, Penderyn, Mackmyra, Stauning, Cotswolds Distillery, Nc’nean and Kilchoman. New-wave whisky distilleries in general sit at many different points in the trade, from family businesses that still carry a founder’s name to companies that have taken in outside investors or changed hands, and a single brand can be sold everywhere from a distillery shop to a specialist retailer abroad.

A whisky distillery’s identity is usually carried less by a single bottle than by a label, a name and the place it promises, because the company behind the name may have changed hands, moved its production or grown far beyond the place where it started. That makes the questions behind each name worth asking plainly: who started it, who owns it now, and where its whisky is actually distilled, matured and bottled.

Each guide separates what independent sources record from what the company says about itself — its founding story, its owners over time, where its whisky is made and how its labels have changed — and marks plainly what rests only on the company’s own word.

Penderyn

From one village still to three distilleries across Wales.

For two decades Penderyn was a single site. Then it spread along the country. English Wikipedia records that plans for a second distillery in Llandudno, on the North Wales coast, were approved in May 2020 and that it opened on 17 May 2021 in the former Lloyd Street school. Whisky Advocate reported in July 2023 that Llandudno runs its own Faraday stills, with water drawn from a well beneath the Great Orme lighthouse and a capacity of 100,000 litres of pure alcohol a year.

The third site followed in Swansea. Whisky Advocate reported that the Swansea Copperworks distillery was unveiled on 14 July 2023 in a restored 19th-century powerhouse on the former Hafod-Morfa Copperworks beside the River Tawe, again with Faraday stills, and with a capacity of 400,000 litres of pure alcohol, matching the original distillery; the three sites together could make 900,000 litres a year. The timing proved hard. Just Drinks reported on 20 August 2024 that the company had “paused temporarily” whisky production at Swansea, with Stephen Davies citing higher UK alcohol duty, the cost-of-living crisis and a “general economic slowdown,” while tours and events continued. In January 2025 Just Drinks reported that Cygnet Gin had moved its production to the Swansea site. The company still presents three distilleries, each with its own water: the Brecon Beacons site draws on the Fforest Fawr Geopark and Swansea on the Dan-yr-Ogof caves, it says.

A note on names: Penderyn is first of all a village in Rhondda Cynon Taf, so searches mix the whisky with local and walking pages. The company’s own site is penderyn.wales.

For a design guide, Penderyn shows how a young distillery can carry a whole nation’s whisky on its label: a village name, a still with a famous surname, a Madeira-finished house style and editions named for Welsh history. Compare Halen Môn, the Anglesey sea salt, and Tŷ Nant, the Welsh spring water in its blue bottle. For this guide we use Madeira gold, Beacons green and dragon red with a display serif, an unofficial interpretation; no product or logo is reproduced.
